Red Chile Adobo Pork Loin with Pineapple Salsa

Pork Loin

1 each Farmland Pork Loin (910300)
As needed Nestle Minor’s Red Chile Adobo Flavor Concentrate (90578471)

Rub pork loin with flavor concentrate. Sear on a hot grill. Roast until done.
 

Salsa | Servings:12

1 each Wholesale Pineapple (377430), grilled, small diced
1 each Capital City Red Bell Pepper (361251; 361250), small diced
1 each Capital City Green Bell Pepper (361261; 361260), small diced
1 each Capital City Red Onion (361112; 361035), small diced
2 Tbsp Nestle Minor’s Cilantro Lime Flavor Concentrate (90399017)

Mix all ingredients. Serve warm or at room temperature. Slice pork loin into 36 slices (2 oz each). Plate three slices per plate. Top with salsa. Serve with C.H. Robinson Cauliflower (360360; 360362) and Simplot RoastWorks Tri-Blend Fingerling Potatoes (963611).
