Stir Fry Beef & Vegetables with Rice

25-50 cups Uncle Ben’s Whole Grain Brown Rice (460668), cooked
9 lb 11 oz AdvancePierre Redi-Steak® Beef Slices (912070, 911212)
8 lb Norpac Flav-R-Pac® Stir Fry Vegetables (963550)
1 cup Kikkoman Low Sodium Soy Sauce (560890)
1/2 cup Lyons Apple Juice (734408)
5 oz Brown Sugar
2 oz Heinz Ketchup
1 Tbsp + 1 tsp Cornstarch
1 Tbsp Wholesale Garlic (380540), minced
1 Tbsp Wholesale Ginger (391014), minced
 
Prepare and hold hot both the rice and beef, transferring beef into two full-size 2-inch steamtable pans. Split vegetables between two perforated steamer pans; steam for approximately 5 minutes or until internal temperature reaches 165°F. In a microwave-safe container, combine and whisk remaining ingredients; microwave on high for 102 minutes or until mixture comes to a boil; remove from microwave; whisk until smooth/sauce is thickened. Pour 1 cup sauce over each pan of beef; gently stir to combine. To serve K-5 students: Place 1/2 cup rice in serving container. Top with 1/2 cup vegetables and 3/4 cup beef with sauce. Finish with McCormick Sesame Seeds (472642) if desired. To serve 6-12 students: Place 1 cup rice in serving container. Top with 1/2 cup vegetables and 3/4 cup beef with sauce. Finish with McCormick Sesame Seeds (472642) if desired.
