Coconut Rum Haddock with Orange Rum Sauce

Haddock Ingredients

1 Atlantika Haddock Fillet – 5-8 oz (922141)
Kerry Golden Dipt Tropical Rum Coconut Batter Mix (90413831)
Kerry Golden Dipt Tropical Rum Coconut Breading (415150)

Preparation & Cooking

Breading can be done ahead of time. Place breaded fillets on a parchment-lined sheet pan up to 8 hours in advance. This is a great time savings for busy rush hours.

You will need three bowls. In the first bowl, pour dry batter. In the second bowl, make a wet batter mix. In the third bowl, pour breading. Dust the fish in dry batter, dip into wet batter, drain excess batter, and then coat with breading. Cook.


Sauce Ingredients

2 cups Orange Juice
1/2 cup Rum
1/2 cup Sugar
3 Tbsp Cornstarch
3 Tbsp Water
1 tsp McCormick Ground Ginger (472371)

Preparation & Cooking

Makes: 12 (2 oz portions)
In a sauce pan, combine orange juice, rum and sugar; bring to a low simmer. Mix cornstarch and water until smooth; whisk into pan, and continue to boil until thickened. Add ginger. Adjust sugar, if needed. Top with orange zest (optional).
