Parmesan Breading

As needed Flour
As needed Buttermilk
1 lb Kerry Golden Dipt Panko Japanese Style Course Bread Crumbs (415090)
1 lb Grated Parmesan Cheese
1/2 cup Bix Fresh Basil (391000), chopped
1 tsp McCormick Black Pepper

Get 3 half steam table pans. In first one, place flour. In second one, pour buttermilk. In third one, mix bread crumbs, parmesan, basil and pepper. First, dredge thawed meat or seafood through flour; shake excess off. Next, dip into buttermilk; let excess drip off. Finally, place into bread crumb mixture, breading both sides. Cook.
