Sriracha Wings

18 lb Perdue Chef Redi® Medium Steamed Chicken Wings
6 Tbsp McCormick Onion Powder
6 Tbsp Salt
3 Tbsp McCormick Black Pepper
6 Tbsp McCormick Sriracha Seasoning
1-1/2 cups Canola Oil
1 cup + 2 Tbsp Cornstarch
3/4 cup Water
3/4 cup Butter, softened

1. In a large bowl, combine onion powder, salt, black pepper, sriracha seasoning and oil. Add chicken and toss to coat. Marinate refrigerated for 1-24 hours.

2. Add cornstarch/water to marinade and mix well to coat.

3. In 350°F preheated fryer, fry wings about 8 minutes or until crisp and thermometer reads an internal temperature of 165°F.

4. In a medium bowl, toss cooked wings with softened butter. Dust with additional sriracha seasoning as desired.
