Reduced Sodium Asian-Style Noodle Bowl

3/4 tsp Custom Culinary Gold Label Low Sodium Chicken Base
8 oz Water, boiling
1 Tbsp Vegetable Oil
1/2 cup Shiitake Mushrooms, sliced
1/2 Tbsp Ginger, minced
1/16 tsp Star Anise, ground
1 Tbsp Sake or Rice Vinegar
1 tsp Low Sodium Soy Sauce
1/4 tsp Sesame Oil
3 oz Asian Noodles, cooked, cooled
1 Tbsp Scallions, sliced
1 Tbsp Cilantro, chopped
1 each Lime Wedge, 1/8 cut
1. Prepare broth by adding base to boiling water. Stir to dissolve completely. Set aside, keeping hot.
2. Heat vegetable oil in a wok or sauté pan. Stir-fry mushrooms until tender. Add 1 cup prepared broth, ginger, star anise, sake or rice vinegar, soy sauce and sesame oil. Bring to a boil.
3. Serve hot broth over noodles in a bowl. Garnish with a sprinkle of scallions, cilantro and lime wedge.
