Mini Baked Nachos

1 each Bush’s Best Low Sodium Garbanzo Beans (601060), drained, rinsed
1 each Bush’s Best Low Sodium Black Beans (601140), drained, rinsed
168 each Catallia Whole Wheat Tortillas – 6 in (951260), cut into 1/6 wedges
As needed Ventura Pan Coating
1 each Land O’Lakes Ultimate Cheddar™ Cheese Sauce (900720)
10-1/2 cups Tomatoes, diced
5-1/2 cups Green Onions, diced
1. Pre-heat oven to 325°F (convection).

2. Spray coating on one side of tortilla wedges. Place wedges on parchment-lined sheet pans in single layer. Bake in oven for 15 to 19 minutes or until crisp.

3. Meanwhile, in a food processor, pulse garbanzo beans until fine and mealy. Fold into cheese sauce. Heat in a saucepan over medium-high heat until 145°F, hot and bubbly; hold hot for service.

4. To make one serving, arrange 10 to 12 crisp tortillas on a plate, spoon 1/4 cup garbanzo cheese over top and sprinkle with 2 Tbsp black beans, 2 Tbsp tomatoes and 1 Tbsp green onion.
