Potato Pancakes

2 cups Basic American Potato Pearls® Premium Gold Mashed Potatoes (602950), prepared, cooled
1 each Egg
1/4 cup Grated Parmesan Cheese
1/2 cup Shredded Cheddar Cheese
1 tsp McCormick Garlic Powder (472341; 472351)
2 Tbsp Flour
1/2 cup Flour    
1. Mix prepared and cooled potatoes, egg, cheeses, garlic powder, salt and pepper (if needed) and 2 tablespoons flour together.
2. Form into potato pancake patties.
3. Dip into remaining flour.
4. Fry on a grill or pan fry until golden brown.
