Breakfast Enchiladas

2 each — Catallia Flour Tortillas – 10 in (949980), heated

6 oz — Sunny Fresh Liquid Whole Eggs (975098), scrambled

4 oz — Smithfield Farmland Diced Ham - 1/2 in (915470), warmed

6 oz — Basic American Golden Grill® Diced Potatoes (602660), rehydrated, fried

3 oz — Shredded Cheddar Cheese (900868)

2-3 oz — Ortega Enchilada Sauce (561080)

PREP | Divide eggs, ham and potatoes between the two tortillas; add 1/2 ounce of cheese to each; fold and roll both. Place enchiladas onto an ovenproof plate and top with enchilada sauce and remaining cheese. Warm enchilada sauce and melt cheese in a hot oven. Serve.
