Oysters on the Half Shell

12 each — Fortune Blue Point Oysters (370821 – Special Order)

2 Tbsp — Butter

2 cups — Wholesale Red Onion (361112), diced

2-3 Tbsp — White Wine

As needed — Salt

As needed — Pepper

3-4 each — Wholesale Oranges (376541)

PREP | Rinse and shuck oysters, reserving bottom shell. In a sauté pan over medium-high heat, melt butter; sauté onion until starts to brown and caramelize; deglaze pan with wine; season with salt and pepper. Top each oyster in a shell with onions, orange segments and orange zest.
