4 each Catallia Pressed Flour Tortilla - 10 in (949980)
1 cup Shredded Pepper Jack Cheese
8 each Eggs, scrambled
1. Sprinkle 1/4 of the cheese on one side of each tortilla. Spoon eggs on top, dividing evenly. Fold tortilla over to cover, pressing gently.
2. Coat a large non-stick skillet with cooking spray; heat over medium-low heat until hot. Toast quesadillas, one at a time, just until cheese is melted, 1 to 2 minutes per side.
3. To plate, cut quesadillas into wedges and top with desired toppings. Optional: May also add cooked and crumbed or diced breakfast meat inside tortilla. May also serve with salsa.
