Parmesan Crusted Trout

The Fish Guys Rainbow Trout Filet – 6-8 oz (372350 – 1/10 lb)

Parmesan Crust

2 cups Kerry Golden Dipt Panko (415090)
1 Tbsp McCormick Basil Leaves (472151)
3/4 cup Schreiber Grated Parmesan Cheese (430201)
1 Tbsp McCormick Lawry’s Pepper Supreme Seasoning (473101)
As needed Flour
As needed Buttermilk
As needed Shredded Parmesan Cheese (900901 or 900190)

You will need three shallow pans or bowls. In one pan/bowl, place the flour. In another, place the buttermilk. In the third, mix the panko, basil, grated parmesan and seasoning. Dip the trout fillet(s) into the four, then into the buttermilk and finally bread with the panko mixture. You may hold for a day after breading (holding for more than a day may make the breading turn dark when frying). Use pan fry preparation. After plating, garnish with shredded parmesan cheese. Serve with side(s).
