Duchess Potatoes

2-1/2 lb Wholesale Yukon Gold Potatoes (361880 or 361876)
1/4 cup Heavy Cream
4 Tbsp Butter
2 each Egg Yolks
2 Tbsp Grated Parmesan Cheese
1/4 tsp McCormick Ground Nutmeg (472391)

Peel, cube and boil potatoes until tender. Drain. Add remaining ingredients. Mix until smooth. Pipe onto sheet pan. Bake at 425°F until tops are lightly browned.
