Chilled Mediterranean Quinoa Salad with Herb-Rubbed Chicken

2 Tbsp Dijon Mustard
1-1/2 cups Lemon Juice
2 Tbsp McCormick Mediterranean Spiced Sea Salt
3/4 cup Olive Oil
1-1/2 cups Red Onion, small diced
3 cups Feta Cheese, crumbled
2 cups Grape Tomatoes, halved
1-1/2 cups Kalamata Olives, halved
2 cups Cucumbers, medium diced
6 Tbsp Parsley, chopped
6 pints Red Quinoa, cooked
6 lb Perdue Diced White Meat Chicken
6 Tbsp McCormick Perfect Pinch® Garlic & Herb Seasoning
1. Combine Dijon mustard, lemon juice, spiced sea salt and oil. Whisk well. Add red onion, feta cheese, tomatoes, olives, cucumbers, parsley and quinoa. Store in the refrigerator for at least 30 minutes.
2. In a separate bowl, toss together chicken and seasoning.
3. To plate, top 1 cup of chilled quinoa salad with 4 oz seasoned chicken. Serve chilled.
