Pina Colada Chicken Appetizer

10 oz Tyson Tempura Chicken Breast Pieces (973170)

1/2 cup Piña Colada Sauce (see recipe)

1/4 each Wholesale Pineapple (377430)

As needed Azar Sweetened Coconut Flakes (464038)

Cook chicken as directed. Toast coconut by spreading on a baking sheet, placing in a 350°F oven and baking for 5-8 minutes or until starts to turn brown, stirring after about 4 minutes of baking. Slice and grill pineapple. Toss sauce with chicken. Serve sauced chicken with grilled pineapple and toasted coconut.


Pina Colada Sauce

Yield: 12 (4 oz portions)

1 qt Lyons Maui Fruit Blends® Piña Colada (730628)

1 cup Dole Crushed Pineapple (571618)

1-1/2 cups Water, divided

3/4 cup Powdered Sugar

1/4 cup Cornstarch

In a sauce pan, combine piña colada mix, pineapple, 1 cup water and powdered sugar. Bring to a simmer. Mix cornstarch and remaining water together, then whisk into piña colada mixture. Simmer for an additional 1-3 minutes.
